Wild forest mushrooms and sprouted lentils on toast

A really quick and easy breakfast or brunch!
The sprouted lentils provide a great source of protein!!!

Here’s a really quick and simple plant-based recipe that I posted on my Instagram (@realearthrose) a while back.


An assortment of mushrooms

1 clove of garlic

2/3 slices of sourdough bread

A handful of rocket

3tbsp of sprouted lentils

A squeeze of lemon

1) fry your mushrooms in a pan with so oil and when looking golden pop your bread in the toaster.
2) once toasted rub the sourdough with some fresh garlic and then top with your mushrooms, rocket and sprouted lentils
3) season with salt, pepper and a squeeze of lemon to taste (I also added some homemade garlic and chilli oil for an added umph!)
