Pistachio Stuffed Chocolate Covered Medjool Dates

These could not be easier to whip up and are the perfect combination of sweet sticky dates, rich dark chocolate and salty pistachios. The perfect after-dinner treat!

Compared to your bog standard choccie biscuit these bad-boys are higher is protein, fibre and healthy fats so, if you’re like me and love having something sweet after dinner, why not give these a try?!

I keep a few in jars in the fridge for immediate consumption and freeze the rest in batches of 10! Simply pop them out of the freezer the night before.


400g dark chocolate

10-15 pitted medjool dates

150g bag of salted roasted pistachios


  1. Melt the dark chocolate by placing in a heat proof bowl over a pan of boiling water (this will prevent the chocolate from burning) and leave to cool slightly.
  2. Stuff the pistachio kernels into the dates then dip them in the melted chocolate
  3. Sprinkler over some more crushed pistachios whilst the chocolate is still melted and leave to set in the fridge for around 30-40 minutes.
