
These could not be easier to whip up and are the perfect combination of sweet sticky dates, rich dark chocolate and salty pistachios. The perfect after-dinner treat!
Compared to your bog standard choccie biscuit these bad-boys are higher is protein, fibre and healthy fats so, if you’re like me and love having something sweet after dinner, why not give these a try?!
I keep a few in jars in the fridge for immediate consumption and freeze the rest in batches of 10! Simply pop them out of the freezer the night before.
Ingredients:
400g dark chocolate
10-15 pitted medjool dates
150g bag of salted roasted pistachios
Recipe:
- Melt the dark chocolate by placing in a heat proof bowl over a pan of boiling water (this will prevent the chocolate from burning) and leave to cool slightly.
- Stuff the pistachio kernels into the dates then dip them in the melted chocolate
- Sprinkler over some more crushed pistachios whilst the chocolate is still melted and leave to set in the fridge for around 30-40 minutes.
